Wild Game
For centuries, the fall harvest and cold weather have stimulated the appetite for hearty fare. Although rich in flavor, game such as venison, elk, ostrich, wild turkey, pheasant and quail are actually low in fat. The addition of sweet potatoes, chestnut puree and a wild mushroom demi-glace keep the body warm and are perfect accompaniments to a full-bodied claret or Port. So we toast our furred and feathered friends for the bounty we are about to receive.
