Smoked Fish
Chenonceaux, Inc. has a gourmet's selection of the finest fish, cured by experienced smokers, who have passed their craft on for your discriminating taste. At no time is our fish pumped and/or injected with additives, as is the case with processors. We take great pride in the fact that we use no artificial coloring, preservatives or chemical of any kind.

Smoked Norwegian Salmon
This salmon is raised on a controlled diet in the fjords of Norway. It is cold smoked and mildly salted with just a bit of hardwood smoke flavor.
Irish Smoked Salmon
This salmon is cold smoked with a heavier cure than other smoked salmons. It's the same type of Atlantic Salmon as the Scottish, but with a flavor only the Irish could have created.
Scottish Smoked Salmon
Scottish Smoked Salmon has a world-wide reputation for its unique flavor. Lightly marinated in scotch before smoking, this fish is Atlantic Salmon and is considered the best in the world for smoking. The flavor is lightly smoky and very rich.
Smoked Trout
This is a mild, lightly salted rainbow trout that even the most discriminating person is sure to enjoy.
Smoked Sturgeon
This large lake sturgeon that we use is a mild, smooth tasting fish that is comparable to the white meat of a fowl.
Smoked Tuna
This red meated yellowfin tuna is highly prized by the Japanese for its unique taste that is in a category by itself. It is mildly cured and very lightly cold smoked, over hard woods.
