three sturgeon, from which the world's finest caviar is produced.
These sturgeon are Beluga, Osetera and Sevruga. |
Beluga
The Beluga sturgeon is the largest sturgeon in the world and may be
the largest fresh water fish, growing as large as 1500 pounds. The
rarest and most prized caviar has eggs that are large grained, ranging
in color from light gray to black, and have a subtle rich flavor. |
Osetra
Osetra is the most preferred caviar in Europe. It has a more subtle,
sweet, nutty flavor than its Beluga cousin and is golden to dark brown
in color. For the caviar connoisseur, it is a prized delight. |
Sevruga
The Sevruga is the smallest sturgeon, reaching a maximum of only 60
pounds. Yet its size has no bearing on the quality of the caviar.
These eggs are small grained and range in color from a light pearl
gray to black. Sevruga has a pleasant, fresh ocean flavor. |
